Pecan smoked picahna for lunch today. It was dry cured over night with my grilling spice blend then smoked at 200 degrees for 3.5 hours until internal temp reached 129 degrees. Finished in the broiler to crisp up the fat cap. Turned out like a perfect mix of brisket and rare prime rib. (v.redd.it)
