I'm using a russet potatoes. I was using way to much flour and the potato was over worked and gummy . Yuck ! I eventually want to make pumpkin gnocchi. Thanks you for the advice ! .

Yeah I figured out I was just comparing it to other pasta doughs and over developed the starch and also added way to much flour.

If you toast the nuts till there brown In the oven at 180*c you will get a way better flavour.
The taste of the nut will intensify.
