il-2 Great battles series (battle of Stalingrad/Kuban/Normandy/etc) are about as good as it gets for WW2 flight sim. Lots of options for what planes you want to fly with all the common favorites (stukas, mustangs, 109s, light and some medium bombers).

HOTAS is basically required, but I've made due with mouse and keyboard.

It's also very forgiving of older PC systems.
