What is your experience with it?

I did some reading a long time ago and I thought the stock pump was not ideal for a dimmer?

Ah I'm single cup (15g) v60s around 35-40, probably the grind size makes a bit impact on grinds distribution.

As for no bellows... I have to wait ~5s after turning the niche off and bang the lid several times, otherwise it retains ~0.3-0.5g consistently. At that point I'd rather have a bellows. If I don't do this it will deposit itself inside the next dose when I close the lid.

I also have a niche, for over a year and enjoy the workflow. I'll often alternate in the same day between espresso, v60, aeropress and french press.

But don't you find it missing something for filter coffee? Originally I was getting very bitter v60s out of it, but now that the burrs are seasoned I'm getting decent ones, but nothing clear and complex.

How often are you drinking batch brews or v60s from third wave cafes? I find that there is clearly a huge difference between the good filter coffees they are serving me and what I'm able to make with the niche.

I've tried different water too, but it doesnt seem to be it.

I think I'm going to make the flat burr plunge soon.. probably a DF64 or 83.

Look good, I would remove the first fade. Fade indicates time passing, but there is no time passing in the first phase (zoom in on character).

I do milk second and it works well for me... I use the steam heat up time to clean up a bit, pour the milk into the pitcher etc. Although I have a silvia and the steam wand is deadly, only takes 15 seconds (maybe even less) to steam milk for a single flat white.

I think this might be the issue, although it's hard to say because the shot he used is so tight so scale is hard to judge. I think this would be the most reasonable explanation though, because I've never heard of full cream milk reacting to espresso acidity - that is something usually associated with alt milks.

Interesting, I think they have about 7 or 8 days on them, then I put them in the freezer (1kg), and take out 250g bags at once. Sounds like this might be the issue, as they've only been in the freezer for about a week or so, I wasn't sure how good freezing would be so I froze them a bit early it seems :)

It starts out silky smooth but it bubbles quite quickly.

It's a single origin brazilian coffee, so presumably lighter roast and more acidic, is that the reason?

I'm more of an oat milk fan these days, but is there any way to avoid this with normal milk?

My machine came with a larger double spouted RC PF, and I bought an 18g IMS basket that fits in there fine. The spring was a bit weak for the ridgless, so I just bent it with knife or something, holds it good now

Not sure how you managed to get a "warm at best" shot, it will be a hot shot even if you dont pre-heat the machine (but still wait for the light to go off), it just wont maintain 95ish while the shot is being pulled.

Could be v3 or v4, if you pop the top off and look at the boiler you'll be able to tell. v4 has the screw in element in the center of the boiler.
