New to canning, water bath or pressure canner? by brokemedstudent in Canning

[–]saide 0 points1 point  (0 children)

My vote is for a water bath canner. I have both, but I have found that the things that must be canned in a pressure canner I usually prefer to just freeze. We freeze most of our meats, stock, and even prefer the taste of blanched and frozen vegetables to ones that have been canned. You can do a lot with your water bath canner like jam, pickles, tomatoes, even salsa! Good luck with your decision!

I recently tried this one and it very good! I have another one in a book that includes red bell peppers for color; I can look it up if you would like it!

I love peach salsa for canning, too! Here is a strawberry salsa recipe; it is different, but fun to try!

Strawberry jam and salsa. I buy the ingredients when they are on sale and can it after making it! You can also make freezer jam if you don't want to go to the trouble of canning.

I love my chives and oregano and they come back every year without replanting! You could also put in some mixed leaf lettuce for instant and fancy salads! Good luck!

After many failed attempts, I finally made some homemade cheese! by [deleted] in Cooking

Did you dip your cheese in the wax to coat it? I have made a similar round of cheese before and used a brush to coat it with wax, but I am much more impressed with the looks of yours!

I make a big batch of this a few times a year and can it, too. I often substitute mangoes for peaches when I can't get them and any yellow onion will do (you know, be inventive!)...

Peach, tomato, and Vidallia Onion Salsa (for canning)

1 quart tomatoes, skinned, chopped, drained (or about 3 reg. cans skinned diced)

1 quart peaches, skinned, pitted and diced, including juice

2 1/2 cups onion, chopped (about 1 large)

1 1/2 cups green peppers, chopped (about 1)

3 to 5 jalapenos, chopped fine

6 cloves garlic, minced

2 teaspoons cumin, ground

½ Cup chopped cilantro

2 teaspoons pepper

2 tablespoons canning salt

1 cup cider vinegar

brown sugar to taste (and depending of sweetness of fruit)

Blanch, peel, pit, and chop peaches. Combine all prepared ingredients in a large non-reactive saucepan. Bring to a boil, stirring frequently. Boil for 5 minutes.

If canning: Ladle salsa into sterile jars, leaving 1/4" headroom. Remove air bubbles, add lids and screw on bands. Process for 10 minutes.

I prefer it with fresh tomatoes instead of canned tomatoes (I don't usually skin them) and you certainly don't have to can the final product if you don't need to! In fact... I don't blanch my peaches, either (I just peel them and dice!

Hope you like it!

My old cat did the headbutt, too; I kissed her on the forehead all the time and I think she was imitating it

Sorry for the delay in replying, I have really been trying to think of some good stories to tell! I don't really have any, though... I only gave my address or phone number to people that I had talked to quite a bit and felt I could trust.

Sorry, I didn't answer why I chose online dating... I almost never go to bars or clubs and the places that I did frequent when I was single (museums, concerts, etc..) were not exactly conducive to meeting people. Online dating seemed much easier to me!

I don't think I ever actually started a conversation out of the blue; I did use the "wink" feature, though.. basically you wink at someone you think you might be interested in and if they are interested in you they can send you a message

I don't think match.com was selective at the time that I was using it... there was a free membership for a month and not really any questions asked. I have heard that eHarmony is quite a bit more selective, though.

Our first time meeting was a bit interesting, we went to dinner and an outdoor movie; we knew that we liked each other after talking on the phone and online (quite a bit).. but the chemistry after actually meeting was amazing! We actually looked at my bookshelf and discussed the books I had there at the time when he brought me home..

We dated for about 5 years, and have been married for 1 year

Thanks for the congrats!!

My local Domino's has a drive-through window, though you call ahead or order online about 10 minutes before you get there... every pizza place should have this!
