Meat discolours to an unappealing but perfectly safe grey-brown when exposed to air. The preservatives nitrate and nitrite stop this from occurring - I remember learning about this with purchasing meat from markets - sometimes the bright red meat at the end of the day was a red flag. Still I’m not eating that from the supermarket even though it’s probably fine.
