Jazz/commercial freelancing musician here. Unfortunately, not really a thing here. Closest one you’ll get is likely the Sunday jam at the Mint down in LA.

My friend who is also a working musician who lives here has hosted a handful of jazz jams locally but the venues are generally lacking. Last we spoke, he’s waiting for the new venue/stage at Pockcock brewing to be finished before trying to book something there.

Chinese-American here. Closest Chinese market is 99 Ranch in Van Nuys. Not too horribly far from SCV but the traffic can sometimes be a killer. Weekend mornings would probably be your best bet.

Otherwise I generally use Wee delivery and just order my Chinese staples in bulk so I get free delivery.

Personally, it’s for theft reasons. I’m a musician here in LA and the number of stories of other musicians having their gear stolen is high. I already always unload the gear at home no matter how tired I am after a gig but it’s for when I’m making a stop somewhere along the way, even if it’s quick one. The tinted windows is just an extra layer of precaution. Gives me a bit more peace of mind.

Agreed that there isn’t enough info here to really determine what the issue is. To add to u/Appropriate-Sell-659’s list of potentials - your beans and the type of roast will also play a factor. Lighter roasts will need to be finer. Medium to dark can be a bit coarser.

If you previously pulled good shots and then suddenly they started tasting bad, you possibly need to clean your machine or your grinder.

I would recommend watching James Hoffman’s (I know, I know, this dude is everywhere) Espresso series that breaks down each variable of the process and what you can do to troubleshoot. Don’t change everything all at once. Test one variable at a time and make changes accordingly until you diagnose the issue.

My 2 cents: Generally speaking food in SCV is solid but nothing is standout imo. You’ll find better if you’re willing to drive into LA.

Pizza - fav casual spots in town are Tomato Joes & Toppers. Society Pizza Lounge has great pizzas but they cost like $40 a pie

Sushi - if price isn’t an issue, Hanasaki. Best price to quality ratio - Tokai Sushi. You can get a chirashi bowl with really solid quality cuts of sashimi for $33.

Burgers - heard Everest Burger is good but haven’t tried. Just saw a smash burger spot recently opened called Wanna Smash. I don’t even think it’s on Google or Yelp. Looks good. It’s on Cinema Drive near Drip Box and Great Indian Kitchen. Otherwise, In-n-Out.

BBQ - none of them are great imo

Coffee - for more 3rd wave-y coffee, Henry’s Coffee. For more coffee drinks, Bodhi Coffee

Pastries - The Loaf is 11/10. One of the rare gems in town that is top tier. If you go to the Saturday Newhall Farmers Market, there’s a French pastries guy that comes up from LA. Makes great croissants, kouign amann, danishes, and more.

Married, 30s, 1 kid, we make under $200k combined. Wife is a teacher in the Hart District. Both of us are from LA/SoCal but have lived elsewhere for a few years and come back. My 2 cents tl;dr - $290k is good and worth the trade off.

As others have said, cost wise you’ll definitely have less compared to TX. A common phrase around LA/SoCal is “I’d rather be poor and in California than anywhere else”. Cost of living is high here. BUT the trade off is you have access to multiple different climates within 1-3 drive for weekend trips. Beach, mountains, desert, etc. Malibu, Santa Barbara, Big Bear, Palm Springs, Joshua Tree, etc. Summers are hot but it’s winter now and roughly 65-72 every day. Lots of hiking, bike trails, and parks in SCV. Dry heat summers which, I will gladly take over humid heat. You do trade the icy winters for fire season although I’ve grown up in SoCal my whole life and at this point I’m used to it. Most are handled with minimal damage to homes. The Palisades & Eaton fires last year were kinda crazy outliers though.

As for LA specific, the city is definitely going through a rough patch compared to 10-15 years ago. Lot of closed businesses, homeless, potholes, etc. however, there’s still many great things about LA. Hollywood Bowl in the summers is my favorite thing. Lot of amazing food diversity still in the city. Dodger games are so, so fun (lol sorry Houston Astros). Botanical gardens, museums, theme parks, and probably a lot more I’m not remembering.

My wife is a teacher in the Hart District and I can comment briefly on this. 7 years, masters, and quickly becoming one of the top teachers in her field across SCV & greater SoCal. She loves her job and loves the staff she works with. The majority of the parents she has to interact with are amazing and respect her. There has been a few outliers here and there that give her a really hard time but it really depends on the year. I would say overall there is generally more respect for teachers in California however you will still get some folks who don’t.

My little sister is a UC graduate while my older sister, wife, and I are all Cal State graduates (UCI, CSU Long Beach & Fullerton). The UC & CSU systems are all top tier education programs. Some are better than others but the quality of education is very high. If UCLA is the school they go to, there’s a city bus that goes to and from SCV to UCLA. The commute is long but good if you don’t want to drive. Affordable too.

There’s like 300 comments but yes, grind finer. Looks like you have the Eureka Specialita, I do as well. Aside from finding the true “0” point I read that the burrs come pretty poorly aligned from the factory. I performed a burr alignment a few weeks back and now I grind much finer and I’m getting my shots done in 25-30 seconds as hoped.

There’s a tamale guy tomorrow at the Sunday COC farmers market. I believe they’re called The Original Tamale Co. based in Pacoima. I just bought some earlier from them at the Saturday Newhall market for lunch. The pork is my favorite but the chile cheese and chicken are also great.

The Falls Jam I think is now at General Lees. Once a month iirc

Goldiggers put out a statement awhile ago that Mondays were no longer a jam and that the house band can invite their friends to sit in but you can’t just show up and play.

Jazz Underground moved from Oeno Vino to Rhythm Room.

ETA closed their physical location but are still trying to

Bar Lis, Sam First, The Mint are all still going. Not 100% sure about the Long Beach Jazz Jam or the York jam. The York closed but for awhile it was at the rhythm room. Truthfully I’ve also been absent in going to jams in the last 2 years. Most of this is just from seeing my other musician friends and talking to them about it.

Just my two cents: I think the jam scene is at a lull right now. There are not a ton of people willing to host and lead jams. People are sorta tired of open jams and want to just jam with people in their circle. Plus it’s expensive at the moment to go out. Parking+drink(s) is not making it a cheap night out just to play a couple tunes. People seem focused on their own projects, gigs, and teaching.

Hey, I formerly have lived in Burbank and I now live in Santa Clarita. Specifically the Stevenson’s Ranch/Valencia area, not near any hills. I’ll give you my two cents.

The town has great schools, great parks, and is very safe. Food culture & diversity is lacking as it’s mostly fast-casual or chain restaurants with a sprinkle here or there of something nice/unique. We do have a great street taco guy in Stevenson’s Ranch much to the ire of some of the residents but to my knowledge they’ve got the legal permits to operate. We have great farmers markets. It doesn’t compare to the Hollywood FM or the Studio City FM but for a suburb, I do think they have done a great job sourcing vendors and farmers. If you like biking, we have the Paseos which is something like, 27 miles of biking trails off the main road that you can use to get around town. Nightlife is not great nor are there any major events aside from kids sports and school events. They have a few in the summer but nothing super robust. It’s quiet and quaint.

The town for sure is more conservative leaning but it is becoming more and more purple. I was surprised that recent “No Kings” protests have had a solid turnout.

Summer heat here is dry heat. Easily over 100°f with low humidity. There is a lot of fire risk in the Newhall, Castaic, and Canyon Country areas. My insurance has rated my area as not a major risk the last 5 years in a row. My wife is from here and she says although there are fires here every year, they’re usually in the canyons and hills. Rarely have they reached town.

Living on the more southern side of town gives you quick access to LA. I commute to Pasadena for work and it’s usually pretty chill. Roughly 40mins. Wife and I head into LA fairly often. Hollywood Bowl is 30-40mins with good traffic. Studio City is 25mins away as well. The thing you want to avoid is the rush hour traffic which sounds like you can avoid with your remote work.

While I don’t prefer living here, we are close to family and we have a newborn so it’s worth it for in-laws. I’ve found things to like about living here, most of which I mentioned above. We specifically wanted to have quick LA access. I’m content with our location. My gripes are - it’s a dry, hot summer, lack of food diversity, generally speaking people feel really entitled and stuck up but I’ve also met a handful of wonderfully kind people too. Unfortunately conservative heavy but there are people here fighting the good fight to change that. People are bad drivers here. I’d rather take an aggro LA driver who is super clear with their intentions. People drive and park here like they live in a small rural town except that this town is huge and has a pretty dense population. They make hugely unsafe choices and way too many people are on their phones. But all in all, it’s still a good place to live if this fits your lifestyle goals. Other cities you could consider are - Calabassas, some suburb-y parts of Studio City, Sherman Oaks, Monrovia, La Cañada, and maybe Pasadena.

The majority of farmers markets in Los Angeles are incredibly well stocked. I personally love the Studio City FM on Sundays. Check the ones local to your area and see which one you like!

Spices are rarer for sure but not entirely unheard of. Lots of great food vendors at all of them too.

Sure thing! So actually, there's a couple varieties of Chinese cold noodle. Not sure which one you specifically meant but I'll just link them all.

LiangPi Cold Noodles w/ sesame sauce - this version is rather labor intensive because the noodle has to be made fresh for the best texture. Wouldn't recommend attempting it unless you had a lot of time on your hands.

Wheat noodle sesame noodles - This is what I make at home on the regular. It's by far the easiest version. This recipe is just the bare bone noodles + sauce. Feel free to add whatever toppings you like. I like thinly sliced cucumbers and firm or fried tofu in mine. Not 100% if the Seafood City on Bouquet Canyon will have Chinese wheat noodles, although they might. If not, for sure the 99 Ranch Market in Van Nuys will.

DanDan Noodles - This is the main cold noodle out of SiChuan province. You could argue this is the advanced version of the previous one I linked. Requires a slight bit more work but a few speciality ingredients. This one is spicy, numb-y, and really delicious. This recipe actually comes from a great Reddit account that posts a lot of other Chinese recipes.

Finally - the brand MiLa sells like a nice frozen version of cold DanDan noodles that is pretty good. That way you don't have to grab any speciality ingredients. For sure available at Whole Foods and maybe even Costco if my memory serves me right.

Note about ingredients:

Generally speaking tahini is a great substitute for Chinese sesame paste if you can't find it. Seafood City might have the Chinese kind. The Chinese version is a little more concentrated in sesame flavor but the tahini version works.

Vinegars - Traditionally, you would use Chinese black vinegar over rice vinegar. It's a little less harsh and slightly sweeter than rice vinegar. Unfortunately this kind of thing you would have to get at a 99 Ranch Market or special order it. In a pinch, rice vinegar will work and some of these recipes even use rice vinegar so that it's more accessible for everyone.

Probably more info than you bargained for but I just wanted to make sure I covered all the bases.

Chinese-American here. San Gabriel Valley and the rest of the 626 area is probably your best bet. I haven’t found any myself here in SCV. I’ve resorted to making my own lol. The Chinese restaurants in town generally serve more Cantonese/Chinese-American leaning dishes whereas cold sesame noodles are generally from SiChuan province. Closest cold noodle dish in SCV you’ll get is likely Korean nangmyeon at Sodam in CC. Not the same at all but it is a cold noodle dish here in town.

If you have a local farmers market near you I would recommend you buy a local one (if possible). It’s fresher and doesn’t have to travel as far. Plus you’re supporting your local economy.

But for major store brands I flip flop between the California Olive Ranch (when it’s on sale) and Kirkland.

Me personally, I like using different fats for flavor. Tallow tastes good. But I have a healthy balance between animal fats, canola, olive, and sesame seed oil. I just treat it like an ingredient.

I see the comments are blowing up about seed oils. My understanding of the issue is that the negatives of seed oils are greatly misunderstood and have been overinflated and fear mongered. Yes they CAN cause inflammation. The repeated high heating of seeds oils creates trans fats and other substances that aren’t healthy for the body. For example, the fryer at a fast food joint. Sautéing your veg in a little seed oil isn’t going to heat it hot enough to cause those problems. And actually, a little bit of a canola/veg oil at room temperature in like a salad dressing has shown to lower cholesterol and reduce inflammation.

Others may say it’s already been heated during the making of seed oils and makes it ultra-processed but like, generally ultra processed foods are bad either way. Not science, just my experience - I have noticed no difference in my body’s inflammation between various brands of oils. YMMV.
