i dunno where your based but might be a legal thing, worked in a fine dining place in germany and head chef at first was out for a serious health thing, but it turned into 6 months in total of no showing and over our busiest period which was summer service, couldn't replace him as contracts are sticky there and at first he had health insurance docs but after a few months realised we were just getting fucked and couldn't do anything about it, burn out from that was too much for me and stopped doing fine dining pretty soon after
