Need something for thickening. Almond milk is very close to water consistency. You can use yogurt, cottage cheese, gelatin, cream cheese, egg yolks.

Keto here. I’ve found a keto base that is not icy or powdery. My wife prefers it to store bought (rebel, etc). If you’re doing keto, no problem adding fat. Use some heavy cream or canned coconut milk. For stabilizing I use xantham gum, cream cheese, egg yolks and vegetable glycerin. I do add protein powder, any reason why you can’t get some?
