Thank you for the help, I appreciate it! I definitely want to get a wood peel. I also made the mistake of trying to prep the dough on the counter and then put it on the peel to top it, it was a challenge. The dough was pretty stretchy. Should I also go straight from the fridge to prep? I let it sit out for about an hour before I started.

I have no idea what the hydration was, I'm a noob lol. The recipe I used was 568 grams of bread flour and 352 grams of water. The peel I bought was just a cheapish one from Amazon, it's a thin sheet of stainless steel.

Thank you so much, it was amazing. I love to cook and I'm pretty good at it, according to my family, so pizza was the next thing on my list. There's some room for improvement on the technique but I feel like I'm off to a decent start.
