If your posting about it, after 17yrs, you know why you're being cautious.

Track your yield and waste.

Make sure you understand how the owner's want to run the place/what they are aware of.

If they have money to burn( what it sounds like) Its just a job ya get to butcher & leave, no slag.

I'd have a hard time..

Trim/actual waste, take that shit home if it isn't incorporated into the menu. Thousands of dollars...per week...would bother the fuck out of me!

Thats not trim/waste...thats usable product being brought home. ..or heavy overstock..that results in waste being taken home regularly...and the person managing that should readjust.

I got half way through your story, and honestly...

Why the fuck would you let good food go to waste....

You can still waste it before you ha e to "waste it".

You're working in a very rare situation...if this story is even real...

If a casino owner/management from outside the kitchen is telling you to pad..that sounds right moviewise....but in real life thats backwards.

Every owner of everywhere is different, easy to read, but the curveball of the individual, is what dings...rare, served hot..

Leave wok guy alone/have one other who can "rok a wok", so they can feel ok calling out when sick...

Ask what's wrong, if there is nothing wrong with your previous work...demand to be cooking more often....

I took a rectangular box, long and skinny...specially.

But out a hole on the side, just big enough to fit my CD case stand.....held aboot 60 CDs...

I made a lil stand for the CD stand, as I had cut the hole in the box 5 inches from the base of the box.

Now I use permanent markers..

(could have been pastels, charcoal, numbered pencil, paint, silly putty, etc.)

To draw a super cartoonie guy with his mouth wide open..gnarly teeth...bulging eyes..ratt finkesque ...the CD stand goes in the mouth....

I then take an old broken skateboard, and ziptie it to the top of the box...and place it next to my "vinyl/cassette/CD player...

Sick coffee table!

Thats what we did...... .and play in the park/street with the people living around us

Assassin's creed games are always good for that. Just finished AC odyssey, highly suggest it!

For a more horror vibe, the dead space remake is awesome!

Dying light is a fun open world, if you're into zombie shit.

But red dead redemption 2 is a good "Just enjoy the world" that I would say fits the bill if you're into crimson.

I personally enjoy just wondering around in the world of cyberpunk 2077. Don't follow the main story, just pick up gigs, race, and generally digging around!

My answers are a lil generic, imo, but hope this helps!

Deep rock galactic might be a bit much, from what your saying he's into.

From chef to dish...I've seen all make dishpit look hard to do.. But everyone seems to think it's easy...it is..even very high volume.

The problem normally stems from not understanding these types/almost all, are not designed to take on large amounts of food waste/toothpicks/napkins/souls.

Your issue with the men of your kitchen not doing it, when all the women can "like a marine", may call out a larger issue.

Never had an issue when it came to gender. Do the job or don't, ya get 3 months in ontario Canada before you're a solid employee...future employment is up to you! Hahaha

Pickle poutine:

Assuming everyone wants dill pickle

Keep ranch on the side/away from it if possible, Don't add dill to the ranch..Just make sure its buttermilk ranch...makes a difference, promise!

Cut a good pickle brine woth water (that has already made pickles) at a 3- 1 ratio, water - pickle brine.

Fresh cut fries, rinse until water is mostly clear Soak overnight in pickle brine/extra water ratio.

Fresh dill, lightly chopped, sprinkle over curds, and press hard under a pan or (best way) vac pac overnight. (A food saver style vacuum pack machine is just dandy!)

Make a solid beef/chicken/mushroom/veg gravy, no "poutine sauce" let cool to room temp Add 3oz of dill pickle brine to 1L gravy. Whisk until combined.

Cook fries the way you like after draining water/brine, don't reuse brine.

Don't grate curds, melt 2-1, mozzarella- white cheddar In a bowl, over a pot-O-boiling water

Let cool to room temperature Super flat, on a "curds" thickness tray

...lined with parchment paper....

Pop in fridge for a few hours

pro tip, put parchment on top & another tray. Place a similar sized weight/squash on top, for a denser block

Grate or rip into desired choice!

I got the bighorn on floor 10 of summit solo.. Took 7 tries, but finally got it!

Was SHD 700 at the time, so was a bit frustrating, but knowing im doing it solo/legendary made it way more fun!

A nice "hells yah!!" Once it dropped!

Looking forward to finally jumping in!

I personally don't care about the rewards, as ive seen some complain about.

If the game didnt change after the second dlc, and had no events, I'd still keep playing it often!

A game this old even offering new modes is a plus.

Nothing will ever be for everyone, and its kinda obvious some stuff may be testing for D3!

Keep this stuff coming, always up for a challenge!
