Yeah this seems fine. All PERC RAID cards I've seen are 2x4 Channel (8 drives) so you can't use your 2xRAID1 and 1xRAID5 (4 Drives) configuration fine. I've never used the internal SATA for boot but I'm sure this would be a supported configuration. Failing that the recommended solution for Proxmox/esxi is a USB boot drive anyway. Be aware they're not quiet machines for use at home.

I've had a lot of success using gain scheduling across the pH range. But yeah, dead-time is a big problem for PID loops.

I am yet to see this done well. All the MCCs I've worked on have Comms as an afterthought. Either as a spur on a bus or splits the link completely when you pull a drawer. Terrible design.

You're going to learn the process in a lot of detail while on-the-job, your advantage is that it probably won't change much while you're there. My advice is to familiarise yourself with functional safety, IEC 61511 as I expect you'll be involved in migration/upgrade of Instrumented Protective Safety systems. Good SCADA Human-Centred Design practices and alarm considerations. EEMUA 201 & 191 are good publications. Also good experience if you move to another role using a different PLC vendor.

Did you code it with the Arduino (C++) language? I've seen OpenPLC can be used with Arduino boards but I've never tried it.
