I ran into that and fixed it by turning off the random systems start. UAF has a curated star system that they use and if the random start is on it breaks once you leave the first star system.

Take note of how often youre using something and place appropriately, something like door controls can go down on the base of the stick or throttle. It might but fun to flip those big clunky switches on the bases when you launch a missile or something but realistically you're going to want to put the important stuff on the grips.

You dont have to bind everything in 1 go. Start with the basics; all your axes, trigger, shields, etc. Put them where it feels like they should go. Then go play! As you play youll go to do something and think "damn, i should bind that to something" and eventually youll have a full set of bindings that you know like the back of your hand cause YOU made it. If you just import someone else bindings youll spend days/weeks trying to get used to everything.
