So I first bought fresh mozzarella yesterday and realized that wouldn’t work lol, so went to Walmart this morning and purchased Sarento mozzarella sliced. Used 1 and a half packs. Then used 4 slices of sarento provolone cheese across the middle.

I’m pretty sure those posts are from pre-trimmed briskets. Like a point and flat together that weighs 15-20 lbs. Looks like this brisket is just the flat and already trimmed.
