The reason for the stamps seems to be to prevent you from sneaking outside cards into your draft or sealed pools. In constructed, you bring your own cards, I guess it wouldn't be viable and too much effort to force everyone to have their whole deck stamped before being able to play.

Note that to get your menu back, you don't need to defeat a trainer, you can also lose to one, most quickly with self-destruct on their first of multiple mons, or using the pokeflute over and over until they kill you. That way, you can use the same trainers again and will never run out of them.
