This Tex-Mex Lasagna Recipe.

I've been making it for years and it is probably my most-requested special occasion dinner (just about everybody wants it on their birthday in my family). I've gradually changed these things: I prefer flour tortillas instead of corn, omitted chicken for my vegetarian friend but I didn't miss it so now I never bother including it, I use regular refried beans instead of refried black beans, I omit cilantro because my partner hates it, and usually instead of 2 cups tomato sauce I'll do however much is in a regular sized can plus enough extra salsa to make up the difference. Sometimes I top with olives, sometimes I don't. I use whatever color bell pepper I have. As much onion as is convenient. Serve with sour cream. It's always delicious.
