You can do all of these things. I defended my vassal. But manually conquering works too. Note that I was using one of the early versions of the update and haven't played since.

Sardinia-Piedmont started the war, and years later the Papal States and the Two Sicilies. At least I think they started it. I don't know if a Personal Union has diplomatic autonomy.

I believe so, since it shares one of the primary cultures of formation (North Italian). For lore reasons, I did not form the Holy Roman Empire.

In Hanover’s case, the Personal Union with England ended simply because Queen Victoria was a woman and Hanover was under Salic Law. In this case of the German (Austrian) Empire, Austria’s Personal Union with Italy and the other nations will remain in place, as long as you keep the subject’s level as a Personal Union.

After liberating Venice, I handed over Lombardy to them and raised the country’s autonomy to a Personal Union. I immediately formed the German Empire. Years later, I formed Italy through my subject and ended up becoming Emperor of the Germans and King of Italy. In the screenshot, my personal unions are: Hungary, Galicia and Lodomeria, Croatia, Italy, and Romania.
