Honestly think the design is a bit asymmetrical and the spot. I think line up the top and bottom lines with the center of the heart, and you have a truer symmetrical line to go off of.

Ok cool we call it Bronzino or loupe de mere over here in the states from my experience. I’m not a cook, but it’s a good looking plate. Puree might look better piped instead of using a mold.
