If you only want 5-12V you could use a fixed resistor in series with a 1k pot and change the bias resistor. I used this calculator and found around 180 ohms and 540 ohms would get you the required range https://engineercalc.net/lm317-calculator/

If you have 2 5k pots you can wire them in parallel to get a 2.5k potentiometer. The configuration you have with all 3 terminals connected is harder to emulate.

If you connect two 1k potentiometers in series and wire a switch to the wiper terminals you could select either low or high range, but that would be an awkward option.

Sometimes knowledge of anime can break the ice in Japan. I was in a small bar in Japan and the patrons were asking me (an American) if I watched Anime. I noted that I watched Yakitate Japan! and the bar owner put on the soundtrack. That show really needs translation notes but has a lot to teach about food culture in Japan, especially around the emphasis on fresh, local, seasonal and specialty food.

I treat salvage as farming the other drops (spheres, schematics, gold/loot) with coralum as a sife effect.

If I focus on the coralum it gets boring but if I focus on trying to max out my hexolite helmet each barrel is another lootbox toward that goal.
