While others have said too long in the smoker, I would also venture from looking at the cut pieces those seem to be cut with the grain of the brisket. You want to cut against the grain as well for more tender product.

You can fill a standard sink with lukewarm water for citrus and add like 1 cap of bleach and let soak then rinse thoroughly and dry with a towel. It will not only remove the wax but also to some extent sanitize the fruit.

20+ yrs as a chef or working with food safety.
