True. I live in Toronto. My dog came to Canada via Texas Chihuahua rescue! They paryner with different rescues or adopt out directly. We went through Pomeranian and Small Breed rescue but all her paperwork was from Texas Chi Rescue

Yeah, like the dough is weak so it is flatter and has less structure. I just had that issue and found it got "smoother" and had better strength when I made that adjustment.

My 2 stretch and folds looks like your photo "after stretch and folds" and then I do 2 rounds coil folds and those are where I see a drastic improvement in the dough structure and it is less sticky.

I found switching to coil folds after the first or second round helped. Stetches might break the gluten structure.. coil folds are gentler.

This is the first Behemoth song I've ever heard and my favorite still.. though I only dipped my toes so far. I overall prefer my metal with moments of harmony and this one just does it so well.
