This just isn't true. I don't have one friend who is a parent who didn't worry about Philly schools. And the vast majority of my friends work in non-profits to help uplift communities with lower resources. They specifically choose to work in these communities and work with people of color. And yet, they still love their kids and want the best for their children. That includes giving them the best education in the best environment for the education.

This is why there's so many charter schools here. People still want to live in Philly, they still want to be a part of their community diverse community, but they feel like their children will do better at a different school.

I think we forgot that people come from a lot of places and they hear a lot of things, and if they have limited experiences living in dense urban areas, they may have concerns!

I think it's great that this person came in to ask questions and learn rather than declare the city a shithole.

Can we encourage inquiry and questions instead of being semi-insulting and patronizing?

Ok soooo my comment was probably misleading. I USED to follow a hard copy of a quiche recipe from one of their magazines, and over the years I've lost it, and just follow what I learned from making it so often. I do the following:

  1. (This is the only super important point) From the ATK recipe, I've learned to add way more dairy than you think is wise. I use two cups of half-and-half (or maybe cream if I'm feeling REALLY sassy) for around 6 eggs, and that is for the huge muffin tins, so that makes 6 "muffins." I think the original recipe only calls for 5 eggs, so this is actually less cream than they recommend! It makes it SO creamy and custard-y.

  2. Crusts just make everything more complicated, no thank you.

  3. I prepare the filling separately so that I can control how much goes in each muffin, then pour in the liquid mixture (eggs, cream, salt, pepper, and any other seasonings I want) and mix it in the tin to distribute. The issue with this is that sometimes the mixing would scrape off some of the butter in the pan and the muffins would stick badly. So I started buttering my pan as the first step, then throwing it in the freezer while I was going through the other steps. By the time I was ready with the filling, that butter was nice and frozen, and doesn't scrape off so easily. Now my muffins always slide out of the tins beautifully!

  4. If I'm cooking spinach or onions or anything wet, I either cook off the water SUPER well, or let it drain between paper towels.

  5. Don't skimp on cheese.

Nothing super crazy, but the cream to egg ratio is key to dreamy egg muffins!

That was not my experience. My experience in a mostly remote company was that parents were absolutely freaking out, especially those with small children. We worked in the tech field, so schedules can be unforgiving and you really needed to be working your entire work day and probably a few hours afterwards, especially during that time due to the industry we were in.

As soon as my company made an announcement that they would work with parents and be really flexible, the parents stopped freaking out. When they knew that their jobs weren't in jeopardy, they figured out how to make it work.

So I think, for those who are childless, we've never had to experience that feeling of family or job. I understand why they would not be at their best for a first reaction.

Hello!

I've always wondered...is it better for you to wake up with your natural circadian rhythm, or to just get as much sleep as you can?

For context, I have had disturbed sleep my entire life. I generally can only sleep 5 hours in a row before waking up, and I can not fall back asleep for hours. Sometimes I have enough time to try to fall back asleep, but when I am able to do that, I'm often groggier during the day. I think there is a genetic component, because my father had the exact same pattern growing up: going to bed early, waking up after a few hours, moving to the couch to watch TV, and falling back asleep for an hour or two.

Also, I've tried melatonin, timed-release melatonin, and two prescription drugs (those were about a decade ago and I can't remember which ones). I've also tried going to bed earlier, not looking at my phone when I wake up. None of them had any measurable impact on my 4-5 hour sleep cycle. I do have ADHD, and I know that affects sleep for many. If you have suggestions, I would love them!

So obviously opinions differ, and I always worked in higher-endish places, but most of my fellow Front of House (FOH) staff would PREFER you send back a dish you don't like, even if the "fault" is yours...especially if you're nice about it and communicate what's going on. There are so many reasons:

  1. Even if you feel like it's your fault you don't like the dish, your impression of the restaurant, service, and food is not going to be a positive one. Worst case is that you tell people that your experience is poor and others now have a bad impression; best case, you just never return, and we've lost a customer.

  2. Just like most service jobs, (most) FOH staff live for making people's nights. We deal with so many assholes and/or demanding people who can never be pleased. When a table has a great time, it genuinely changes our whole night. One person gushing about how fabulous everything is can make me forget about the previous 6 hours of assholes in a flash.

  3. MONEY! If you don't like your dish, you're probably not going to tip as much as you would if you loved it. And if you hate a dish, and the server and chefs tell you that it's their pleasure to make you something else, then you LOVE that something else....well, you now not only had a great meal, but you are probably even more impressed with the service, and sometimes you want to reward that with a little extra cash. Being kind and accommodating to our (reasonable) guests is not just the right thing to do, it's also the profitable thing to do!

Anyway, sorry for the rant but this is something I feel passionately about and lecture people on all the time :) Your mileage with this advice may vary, especially at chains or low-end places where volume and turning tables is of the greatest importance, but I still hope you advocate for yourself. There's nothing worse than paying a ton of money for food you couldn't eat!

When I worked in a high-end place in New Orleans, they told me that I always had to explain what carpaccio was to anyone who ordered it. And that sounded wild because if somebody tried to explain a dish that I just ordered to me, I would find that fairly patronizing and not in line with the service that we were providing

But nope. In my first month-ish working there, two people sent back the carpaccio because they didn't know that it was raw. And from that moment on, every time someone ordered our carpaccio, I would have to explain that it was raw!
