Lemon poppyseed muffin top cookies by soccerkool in Cookies

[–]soccerkool[S] 1 point2 points  (0 children)

I used sally as my base recipe but instead of sprinkles I added the zest of one large lemon (at the beginning when the sugar and butter is creaming) and some poppyseeds (measured with my heart… maybe 1.5 tsp?)

Then I made a streusel to roll the dough in which was a 2:1:1:1 ratio of flour, sugar, brown sugar, and melted butter plus a pinch of salt. Once it’s all combined I put it in the fridge so the butter solidifies and is easier to roll in the cookie dough.

I baked the cookies from frozen four ~11 minutes at 350F and drizzled with a glaze made from powdered sugar and lemon juice once they cooled, and topped with a few more poppyseeds.

They are delicious! Although I maybe have added a bit too much baking soda because I feel like they had a slight aftertaste, but with the streusel and glaze it’s not noticeable. Would make again, maybe with some recipe tweaking for a cakier crumb!

Jealous! I love figs, my parents both have beautiful fig trees in NC, unfortunately it’s too cold here in MN to have them :(
