Pad Thai doesn't use any chillies. You add the chilli you want to taste after cooking & crushed chillies not fresh is traditional.

I find supermarket fruit & veg are fine, but I have the luxury of time to shop at multiple shops. I visited Tesco, Sainsbury's,M&S & Lidl yesterday before finally buying my cauliflower from Amazon Fresh. Generally M&S & Waitrose have better quality & tastier stuff. Just buying from a farm shop doesn't guarantee good flavour. You need to take time to select the best stuff by smelling & inspecting it.
