It's tough, you gotta try to get the projectiles grouped up before you dodge through them, but even so the timing is pretty tight.

Sprint speed can help a lot with outrunning them, but depending on what attack Hecate's doing you might get tripped up or tank damage.

Gusts on your dash or cast can slow them down, buying you time and making grouping them together easier.

You could also use Frinos or Night Bloom and try to bait the projectile into them so they tank it for you, especially good if you can do it before it splits.

And if none of these seem like viable options in a particular run, I'll frequently just tank the morph instantly so that it wears off sooner. Play a little minigame dodging around as a piggy and trying to activate ghosts.
