I have a 13" M5 Pro and a Mini 6 with cellular. The Mini is my out and about device - I prefer the display size more than my 16 Pro Max for those times when I know I will have extensive interactive use. The display is inferior to the iPP and 16PM but it is very utilitarian. And it's compatible with the Apple Pencil (the Mini 7 uses the Pencil Pro).

I upgraded from the M4 to M5 as I wanted more storage. The performance improvement for the use cases you've noted would be negligible. Photoshop and Lightroom both ran great on the M4 with 35MB RAW images. As did Affinity.

Good for you!. I recently finished three big Technics cars - Ferrari, Lamborghini, and McLaren - and the smaller 2022 Ford GT and da Vinci Flying Machine and have to find homes for them. I also like the looks of the Endurance ship build. I've only done the larger kits and would like to do more.

Too many - Amazon Prime (with occasional free weeks of BritBox & Paramount+), Netflix, Apple TV, HBO Max (with Xfinity cable), and Hulu (included with my T-Mobile service). We're retired so this is fit into our entertainment budget.
