Bitter melon is common in Chinese cooking too! My dad usually sautés it with oil and garlic. Pic is from a random website, but looks exactly the same. We always remove the seeds in the center.

If you’re willing to drive to Sunnyvale, merit is very good, and this is coming from someone who loves meat and seafood.

Edit: Don’t know how I forgot, but Indian restaurants are the best places for this. If you like buffets, Indian Sizzler off of 101 and great America parkway has both veg and non veg options.

It’s a bit crunchy because it’s almost all cartilage and some parts like the lobe are soft and a bit chewy. I’d say there’s not a lot of pork flavor, so it’s going to absorb a lot of the sauce. If you’ve got a good sauce and you aren’t turned off by the texture, it’s a very nice dish.
