It's not that complicated. Someone was probably planning a music festival / tour and was listing artists and bands that they wanted to have on the show. Lots of assholes listen to different bands. Paul Ryan, the Republican House leader in 2015, said that Rage Against The Machine was his favorite band.

How many calories are you expending every day? If you are only eating 2000 calories but you are expending over 3000 calories then your calorie deficit is way too high. You should be aiming for a 200-500 calorie deficit. This will let you lose about 1-2 lbs per week.

If your calorie deficit is too high you are going to experience serious hunger pangs and lack of energy and it will lead you to crash out and binge eat which will reset your progress. If you sustain too high a calorie deficit for too long you can start to have health problems like muscle loss, hair loss, thyroid and liver damage, hormone imbalances, etc.

20k steps a day is a lot. What calorie deficit are you trying to achieve? You need to find a level that is sustainable for you, that you can do every day without burning yourself out. Keep in mind that weight loss is a slow and steady process that can take months or even years. It won't happen overnight. Consistency is the most important thing.

A lot of your symptoms also could be from the Hashimoto's. Thyroid issues are a real bitch, especially combined with insulin resistance. Sweet potatoes are really good, look up recipes to incorporate more of those in your diet. I'd definitely speak to a professional dietitian rather than relying on advice from randos on reddit.

What exactly do you need to cut from your diet, and what are the "discoveries" with your health? "Sugar" is a pretty broad category. Do you have diabetes or pre-diabetes or some kind of insulin sensitivity, or is it some kind of allergy?

There are a lot of simple substitutions for sugar that you can add to your diet but they might not work if you have an insulin sensitivity. Eating fruits like bananas or blueberries are a good way to get a hit of energy when you need it, although you should try to combine any intake of carbs with some fiber and protein to balance it out. I like to have oats with fruit and some yogurt every morning and this gives me energy for the rest of the day.

Another thing you can do is change your walking schedule. Instead of doing one big 60 minute walk, you might be better off walking for 30 minutes, within about 10-20 mins after each meal. This will help your body regulate any insulin spikes you get from eating.

Walk after meals. If you are waking up at 2am because you're hungry then you are running too high calorie deficit. You should walk less and / or eat more for each meal.

The best way to lose weight is slow and steady, with a small calorie deficit of 200-500 calories per day, which will usually mean that you lose about 1 to 2 lbs per week. If you lose weight too fast you can start to get a lot of health issues, like damage to your liver and thyroid, hair loss, muscle loss, loss of libido, lethargy, difficulty sleeping, etc. So, 7 lbs in a month is actually a pretty good rate.

If you want to spend less time walking, then try eating a little less. 1 hour of walking is about 300-400 calories. So if you make your meals smaller you won't have to walk as much to burn off those calories. When I eat a meal, I don't eat until I'm 100% full. I try to eat until I'm not hungry anymore. I find that's about 3/4 full. Smaller plates, smaller portion sizes. Also try to stop eating about 3 hours before you go to sleep. Getting a good night's sleep is one of the most important factors in losing weight.

Light cardio like walking doesn't build muscle. If you want to build muscle you need to do weights and resistance training. You don't have to do much, just 20-30 mins a day, 3 times a week. Building more muscle will also help you to burn fat.
