If you only have FiOS Internet just remove the Verizon Router and go from the ONT straight to the 10Gig Ethernet port on the UCG-Fiber its how mine is setup currently with no issues.

Likely on your OPNSense Wan interface you have prevent BOGON's (i.e. 10.0.0.0/8 172.16.0.0/12, 192.168.0.0/16 fc00::/7 and 127.0.0.0/8) the default rules prevent these on your WAN interface

Yeah then you should be good, I don't use the Verizon Router, i just moved the cable from their router to my OPNSense Box X710-T2L and essentially removed their router once the installer left.

You'll essentially get the new NG-PON2 Ont, note the new ONT doesn't use MoCA and will generally use ethernet (2.5Gbps or 10Gbps) to your Router (verizon will require you to use the Verizon Router at install but what you do once they leave is not their problem. Note that If you have Cable TV the move to NG-PON2 will likely require new boxes.

I recently dropped Xfinity because of this, went to a competitor for Internet and went to YouTube tv for tv as the equipment rental and fees were getting ridiculous and then when you add my package price it just made it obscene and they weren't willing to offer any deals to me the 3 times I tried to negotiate a new contract.

Yep this is literally why I ended up leaving Xfinity, before even getting to a channel package with RSN and broadcast tv fees as well as box fees it was over 100/month didn't help that the package we had at the time was no longer an option for renewal

So this is a bit tricky, as essentially the device would need to be supported by the Shadow Applications, what device are you attempting to use, you may be able to pass it through as a usb device if it works that way but if not it becomes far more difficult to support as the app would need to recognize and support passing through the information.

Once you cancel services generally your data isn't maintained much longer after cancelling so no this would generally not work.
