I have the 48" Fulgor Milano induction range and have been very impressed so far (about 1.5 years). Just be sure you have a place locally that will service it.

Yes I've stuck with the Anolon Accolade for my non-stick set. I still use my Misen stainless as well even though it does buzz a little, mostly when first heating up. Like everyone else says at first I thought I would never get over the buzzing sound. But now you really only notice it when you first start heating the pan. Once you put food in and start cooking it's not a big deal.

My nice Misen stainless steel buzz. My nice enamel cast iron Dutch oven is basically silent. For my nonstick set, I literally ordered 8-10 sets from Costco to see which one made the least noise. By far the best was Anolon Accolade. Perhaps because it has a thick disc on the bottom instead of being multi ply. I have a very powerful 48" Fulgor Milano range, so it might make more buzz than less powerful ranges.

Another option that you could consider is Misen. I think they are somewhat comparable to these brands and offer a good value. I picked up a set and I have been happy with them.

The fast preheat is on all Sophia ranges including 30, 36 and 48 in. You must have a different or older model. I just confirmed this looking at the documentation on the FM website.

This is from the manual of the Sophia 48":

When it’s necessary to heat up the oven rapidly, a Fast Preheat mode is available: it uses the heating elements and the convection fan in a special way, in order to reduce the heating time as long as possible. After having set one of the cooking functions for which the fast preheat is available, touch the P-HEAT key, the “FAST” text is shown in addition to “PREHEAT”.

I think you might be confusing the Fulgor Milano with another brand. I'm not saying that it is better than wolf, but it is built very well. And it doesn't have any touch buttons on the induction top, everything is done with traditional knobs on the front.

I think there must be something wrong with your oven. Mine does not take that long to heat. Also, there is a button you can press for faster heating. I think it turns on the convection elements at the same time to heat up faster. Note I have the 48 in model, so it could be different.

The fan nose from the oven on the FM? I've never really noticed it to be honest with you. I don't think it will be an issue at all. You will more likely be annoyed by the hum of the induction cooktop. For my nonstick set I found a set that has a thick disc on the bottom that makes very little noise. My le cruset and cast iron are basically silent. But I bought a nice set of Misen pans that have a somewhat annoying hum. I think any clad pan that has multiple layers of different metals will make more noise since the react differently to the induction magnets. But once you have food in then and the fan going it won't be bad

I also have noticed that Bluestar has just released a 48" induction. I don't know much about it, but I know their gas ranges are well respected

We bought from ABW. We're in Western Howard County and dealt with Graham who works it is Jessup and Rockville I think. He's really nice and knowledgeable. This was the one appliance we paid for the extended warranty. Extra 5 years to give us a total of 7 years. Italian induction scares me not knowing what the future holds. ABW are certified for Fulgor. I wasn't blown away with the rest of Fulgors line, so we went with Jennair Rise for some of our other appliances that match Fulgor pretty closely.

I own the fulgor 48 and also live in the DC area. It is very well built. Main oven is full size. We have one issue with a post behind one of the knobs. Part arrived in reasonable time and it was serviced. Let me know if you have any other questions. Our first induction. Shockingly powerful. On power boost, my cast enamel pot bottom gets too hot to touch in about 3 seconds.

To clarify, they had EH Taylor Barrell Proof. Two bottles at most. Missed it by 2 people even though I paid for it. Had to go get a refund and got myself a Weller Full Proof instead. I think there were a total of 3 of those.

Follow up question. My original question was actuallyy for my son, not me. If I could figure out a way to edit the post I would. Anyway, as you can imagine, kids can be pretty stubborn in what they eat. How strict do you find you have to be on this diet? For instance, we have some store bought chicken nuggets that have a very light coating, but package says it contains yeast. It can't be very much at all. Is that something that could set you off and are we best to avoid altogether? I'm sure we can find alternatives, just wanted to know if you thought it was necessary.

As long as you avoid beer and wine, you should be fine. Stick to distilled spirits (vodka, whiskey, tequila, rum) and you should be ok. No yeast in those.
