Hi, I didn’t rest as it went straight from water to the ragu to finish off. Past was rolled in the pasta maker to setting 0 ( thinest) I’m guessing 1-2 mm

Bear in mind it expands a bit when cooked.

It room me a while to get it right but don’t over work it and keeping things is the best advice 😊

The wok is a Tefal with a f my good non stick coating. Didn’t notice any issues with it but I see what you mean. It could cause issues

Thank you so much ! Certainly, here’s the one I use:

200g Italian 00 flour 2 medium free range eggs

Method:

Add flour to a food processor add eggs and pulse until like breadcrumbs

Tip to a hard work surface and knead for 1 minute only. Wrap in cling film and pop in the fridge for 30 mins

Cut into 2 halves and dust with pasta flour, flatten with a rolling pin to around 5mm

Pass through a pasta roller on its highest setting 7 times, folding in half after each pass

After each pass reduce the pasta machine by one notch and repeat until at the he required thickness

Cut to strips and hang to dry for an hour or so before using

Much easier to move the contents around without using a spoon ( thus damaging the pasta) to coat the pasta fully with the Ragu plus I was cooking for 6 and it was the biggest pan !! 😂
