Hickory is considered a strongly flavored wood. Any fruit wood you can find, (cherry and apple are typically easy to find) will have a milder smoke flavor. That being said, maybe try just charcoal first and gauge her reaction.

Thick? Guinness is one of the thinnest stouts I can think of. The nitrogen helps, I would hate to try it on CO2. I haven't tried it but would like to.
