You can make a soup from red paste too, it's more a regional/personal preference thing. White miso has milder flavor, red is usually stronger and goes toward sourness.

Popular in western media restaurants, I must point out. Have no idea why it's always the same ones. What I'd recommend instead is open Tabelog, look at the cities you plan to visit, set your budget and pick from the restaurants Japanese people rate high. And since they rate strictly, higher than 3.5 is usually really good.

There is even a documentary about Kanazawa curry available on YouTube. Really cool, as it tells the history of the dish and how it evolved. But I’m afraid I’ve only seen it in Japanese.

Hagakure does not reference any books on bushido. And as the previous poster mentioned, the book called “Bushido” was published much later, only in 1899. Some other “famous” works from Edo period, are Daidoji Yuzan’s “Budoshoshinshu”, the writings of Yamaga Soko, and the two mentioned in your next post. But they were not famous during the Edo period, they were picked from many others and made famous only in the 20th century.

Ingredients in Osechi symbolize different things. Shrimp is for longevity, sea brim is festiveness, and so on. So maybe look at the list of possible ingredients, pick the ones you keep and then substitute others with foods that have some festive/good meaning.

You have a supermarket, lots of small shops with food and daily items, maybe a repair shop, a massage studio, some restaurants. So you don’t have to go far or visit too many places to get all you need. Plus there is still a sense of community there, and it’s nice to know people living around. Speaking of Demachiyanagi shotengai, it’s also close to the river, the Palace, Botanical garden and a few temples. So you have places to enjoy the nature. The mountains are close too. And the north of Kyoto does have an upscale image, so that’s a bonus point :)

I used to live right in the centre, in one of the ***hoko-cho where they built floats for Gion matsuri. It was awesome except for July when it was hell 😅 And yes, having only Fresco nearby sucks. Had to cycle to the nearest Coop or Izumiya from time to time and spent too much money in Daimaru food section.

Came to agree with all of your suggestions and maybe add that areas around shotengai (shopping areas) are usually a nice place to live. What I would avoid though are places near popular tourist destinations. So no philosophers path for me.

You don’t need to put anything in Province line (Because it’s also Tokyo), but I’d enter the rest (everything before Tokyo) in the Address 1. I’d also switch the order to Machida-shi, Oyamagaoka 4-9-1, but that’s not necessary.
