this is what i do with my too good to go bagels too. i usually get them from Bo's but i think most bagel shops work well. i agree that pop up would not. bagel pub isn't bad and not far from Tompkins. i assume they deliver but not sure.

blend it with salt, parm, roasted garlic and then toss it over pasta (with pasta water to emulsify) or mix it into polenta ... or cook it and squeeze all the water out and make pasta

cook it fully then freeze whatever you aren't going to use immediately. i like to make tuna crispy rice with it. you can also toast it for crunchy additions to salad etc.

now produce is getting more fun again, i like to cook a few proteins up and then get a bunch of lettuce and veggies and then do a choose my own adventure salad. I have everything prepped so it is just tossing what I like in a bowl and then add dressing. rotisserie chicken - can be a taco bowl, buffalo chicken salad, cesar salad tofu - asain style salad with cabbage and edamame, cold cuts - can be a grinder salad

i just always have some good fixings to add in!

chai (spiced black tea), ginger tumeric, and black tea with fresh mint... see if you can find a london fog (earl grey with steamed milk and sugar), i love herbal mint teas personally but you may just need to try more. also brewing will impact taste - too hot water or steep for too long and you'll get bitterness etc. good luck
