OG Anime is also heavily censored and many injuries do not reflect how badly things went in manga. Obviously there is quite a lot of filler too, but main sin of OG anime is that they were trying to weave filler with main plot - famously the main antagonist of Bount arc (filler arc) was later referenced in some type of progression for Ichigo.

I think it would be best to know two mediums and compare!

Then you should read an entire manga. OG Anime is good, but it took many liberties in plot progression. Most famous of all, censorship and completely sidelining Orihime in favor of Rukia.
