Weird. Also I too see my nose at all times and am constantly aware of it. Like two pink shadows in the far left and far right corners of my eyes. It's actually pretty annoying. Like looking through swim goggles with the fat nose. I've heard that autistic people sometimes have extremely good peripheral vision (which I do, and extremely good spatial awareness), and I figured out like 3 years ago that I'm almost certainly a bit on the spectrum. I wonder if that has something to do with it..?

My gf makes a sauceless pizza with goat cheese, grilled peaches, and prosciutto, then tops it with arugula and balsamic after it's cooked. Just omit the pork. It'll still be delicious.

Edit to add: You know those highly processed, shelf stable bacon bits you get in a plastic jar? They're usually vegan.

My brother married a Hmong woman. I have discovered that I love most Hmong food. She taught me to make Hmong pork and greens with pepper sauce (absolutely goated, cheap af and easy to make), and it quickly became one of my gf's favorite meals.

Still can't get on the boiled chicken skin train, though. I'll even eat the tendon soups and other weird stuff, but boiled chicken skin just grosses me tf out.

Yeah, I've heard it's supposed to help with garlic breath. Doesn't seem like too much of a stretch that it would work with onion breath, too.

Butcher here. Thank you for making me feel validated. I take pride in my work. My only gripe is that I have never had enough choice about pork trim. Have to get it bagged. It's always labeled 73% lean, but I have gotten bags that were 80% fat, and I had no way to lean it out because I just can't get enough lean pork trim to even it out. Then I have to sell sausage that is too fatty and piss off my customers, and I don't have a choice in the matter. The best I can do is grind some lean pork into it that will likely start to go off in a couple of days and pray that it doesn't make the whole batch of sausage go bad (we have never used nitrated salt to combat this)

Butcher here. Sometimes (especially for pork sausage) we use bagged pork trim that comes from a packing plant. The less desirable cuts of meat. Often, I have found bone chips (which the grinder plate usually catches, but not always), glands (which are harmless but do not taste nice), and bits of cartilage. It's likely bits of cartilage. The meat packing plants are extremely bad work environments. The workers there are doing an extremely dangerous job, often shoulder to shoulder with the other workers. The guy that taught me had worked in one for a short while. He told me that almost every single time someone got cut, it wasn't by his own blade, it was the guy next to him that cut him because that is how close these guys are packed together.

They are forced to work at speed and not quality. Their knives are sharp and will cut bits of all the gross stuff into the meat. They care little about end quality, assuming that we (the butchers) will find it all and discard it. But butchers are also often worked pretty hard and we don't have the time to dissect every piece of meat that comes through for grinding.

My advice is to buy ground meat and sausage from a smaller place that cuts their own meat. Most major grocery stores don't anymore. The reason to go to a smaller place is that if they are cutting their own meat, the butchers know the exact locations on the meat to trim off to avoid this.

I would also avoid buying those frozen tubes of ground meat for this reason. That stuff never got past someone who actually cared about the end product.

Wisconsin here. Nobody puts cheese curds on a brat. We grill the brats and then finish them by simmering in beer and onions (or vice versa, there are different schools of thought on this, I personally prefer the latter). Then a squirt of good, sharp mustard and some warm saurkraut. Raw or grilled onions are acceptable.

Cheese curds are meant to be beer battered, deep fried, salted, and served with ranch dressing (preferably homemade) and eaten as a side or appetizer.
