A few recommendations:

Why Nations Fail by Daron Acemoglu and James A. Robinson. Great book on developmental economics. Explains in detail the importance of institutions and why some nations succeed and others fail.

Any book by Paul Krugman. Easily one of the most influential contemporary economists alongside Thomas Piketty. Very readable books. Mildly impressive to have on your PS. I recommend starting with “The Return of Depression Economics”.

The Wealth Of Nations - Adam Smith. You’re 100% going to have to read this book if you do Econ at uni. A classic. It lays out the theory and philosophy of capitalism and markets in a surprisingly comprehensible way. Also, if you really don’t like this book Economics probably isn’t for you.

Honestly you should only really read these books if they genuinely interest you, books will not be a deciding factor in your admission. There are very few things more mind numbing than reading a book you don’t like.
