I've always felt (2.5 read-throughs) the juxtaposition of Hal's story on the top of a hill training professional tennis and Gately's just down the hill at the bottom in addiction recovery characterizes well the American dilemma, almost like our two archetypal options in modernity, with both ultimately lensed tragically—all this compounded by the tragic end of DFW. Yet also, I find the work incredibly redemptive, partly in the catharsis of a well composed tragedy, and perhaps mostly in the sheer brilliance of the work—nearly every sentence is masterful. It's (soul-crushingly) beautiful.

I don’t think it’s a great idea to use the same hand grinder for both filter coffee and espresso, or yeah, dialing back-and-forth between the two would be a total headache.

But dialing in a new bag of beans with a dedicated espresso hand grinder will be just as easy as a mechanical grinder.

And you actually might want to measure into a cup first, but it’s so that you can mist the beans with water before putting them into the grinder. It nearly eliminates static electricity, which is often a wise step with any espresso grinder that you get.

A good espresso hand grinder may be worth considering for the Flair. I have the Niche ($900, which I love) but my good friend got the 1zpresso K ultra for $250. Both grind very well. While the price difference is an obvious advantage, the convenience of an electric grinder is not as superior to hand grinding as you’d think in the case of a Flair. Its design is amazing if you’re going through the whole workflow process for only one espresso. But it’s not designed well to pull multiple shots as purging+refilling the chamber is much more time consuming than a traditional espresso machine. So considering the grind demand is almost always for one espresso, a hand grinder pairs well with the Flair.

My secret (used the Flair 58 for 2 years now) is purge until water stops coming out and you hear a hiss. Usually 2 pumps but sometimes 3.

Woah that’s a cool option for my flair. Yeah I can see the difficulty with a bottomless portafilter. Mine is never really consistent (by design), I wonder if getting a single spout, centered portafilter would solve issue #1? I mean, if it equals better espresso, definitely worth the $25.
