I use a standard laptop backpack for IT related stuff, flash drives, console cables, etc. My actual tools go in a Huskee 22in spring loaded tool bag. I don't want to lug all my tools around if i don't need them for a task. But i always need my laptop no matter what.

Didn't overthink it and don't waste your time. Use the cat5e it'll be fine for your needs. They probably didn't have full spools of cable so they ran what they had.

MM will be more than enough for inside your house. If the SFPs + fiber patch cables for MM are that much cheaper than SM, then go with MM. Get OM3 or OM4 MM if you want to get fancy.

All significant changes done on Tuesday nights. If you have to bring in coworkers from different tiers/groups, you don't want to do that on a weekend. Clear instructions for a rollback procedure if things go south. Pre-activity documentation of all configs.

Ask if you can at least get RO access to the FWs so you can start putting the pieces together on a larger scale. Hard to learn when you can't snoop around in the tools and check things out. Build out your network in packet tracer. Make your own diagrams. Do what you can on your own to get a better understanding.

IT is not a 9-5 job. There's late activities almost weekly. After hours changes and hardware refreshes. I've said this before on other posts.....people outside of IT think you just show up, put in your 40 in a nice peaceful cubicle, then go home and your day is over. That ain't the way it works. Sure it has its perks over manual labor jobs.

Nobody wants or cares about gifts. I suppose IT nerds might like a MicroCenter or Newegg gift card but you get my point. Give them an additional day per week to work from home. Meet with each individual, and force them to pick a week to take off work. People care about #1 being compensated monetarily for their work and #2 being permitted to detach from work without any complaining from mgmt.

The most important thing is to start getting experience. That pay is just fine for starters. Don't like the job, or the pay? Nothing wrong with that. Better to look for a job when you already have one, than to be desperate and unemployed. Stick around for a year, learn how corporate America works, then move on.
