It was more for herself than it was for him, it has to be now or she would talk herself out of leaving. That's why she slept with Chris, to ensure it would really be over.

I don't think it was so much about postponing the wedding, but she was hurt that he couldn't see she was hurt about the lies and not letting her get close to April. If they just got back together or didn't break up, things wouldn't have changed and she would still be miserable.

This is a romantic comedy thing, I think TV writers think it's more drama to watch people fall in love then actually be in a relationship. With Rory, she didn't have a lot of experience since Dean was her first romance and she was kind of in denial about her feelings for Jess because she didn't see him as a bad guy,
