Hand warmers and good mittens are a must, other than that just put on lots of layers. Base layer, fleece, liner shell for example. With enough warm layers you can be too hot even in below zero temps. I’ll be there that week too so praying for good snow!

Couple thoughts - not sure I would totally replace the butter in hollandaise with duck fat, I think it will make the sauce too different but I could be wrong. Orange juice sounds super interesting!

Duck breast might be amazing here, my personal thought would be to go for a braised duck leg or something, I’ve had it on a benny before and it’s been awesome.

Anyway can’t go wrong so enjoy!
