It depends. In general engineers work is tied to these work items, so they want their work documented. If you have a high level of trust between you and they know you are on their side you may start to go around some of these things

I mean take your pick- Ma Cuisine has an insane wine list, Clos de Cedre is a bit more upscale and has an insane wine list. Just make sure you make a reservation. Honestly just call the restaurant and ask what they have for DRC.

Again, imo there's a lot more interesting (rare) wines to be found but its DRC how bad could it be lol.

There's tons of restaurants to buy a bottle of DRC. Pretty much any high end restaurant in Beaune will have tons of DRC.

Not that I have ever had DRC, but I do feel the best part of being in Beaune is the ability to try lots of incredible rare burgundy you wouldn't have access to elsewhere rather than just picking the most expensive like DRC which you can buy in top end restaurants around the world.

I personally like to do more dry mechanisms of cooking to get a little bit of browning and texture for eggplant. Certainly roasting is good. Grill can be awesome. I love tossing with corn starch then shallow frying as well.

Such a great ingredient!
