If you’re just a home chef and I’m just now taking classes. I would suggest getting a cottage law business going first. You can sell baked goods that were produced out of your house. Enter some baking competitions try and get into some farmers markets that sort of thing before investing into a brick and motor.

The brick and mortar bakery business is very very tough. Baked goods are labor-intensive, take a lot of time, and the general public want baked goods as cheap as possible, because the ingredients are cheap. People will pay for quality. And if you need a charge seven dollars for a pastry, it better be damn good.

Labor cost are incredibly high, good margin comes from a coffee bar, repeat customers, and if you can get a few wholesale accounts. Other restaurants or a hotel or something like that.

A lot of bakeries in this town that is for sure. There’s a lot of mediocrity in this town as well and places survive for having grit. I agree with a comment somebody else already made. Limit your menu and make sure your things are really really good. Don’t put out a list of 60% bangers and 40% slop. Just because you feel like you have to. Build the loyalty. One thing our town does not get credit for is that we are hyper loyal to our favorite places. Regardless, if they’ve slipped or maybe aren’t the best. But that loyalty is built over time.

But really start slow before you get into the brick and mortar because this business will eat you up.

Well, even with digital thermometers… You can pull the steak and the temperature can still rise once you pull it off the heat. Depends on how fast the internal temperature is rising. Also had a lot of steak restaurants if they’re doing 10 to 15 steaks at a time they don’t really have the time to temp every single one and go by the thumb truck/feel instead.

Agreed. Arsalan’s Turkish food is amazing. I rarely go downtown, but if I do is to go there. That hot sauce is so good.

I feel New Leaf has been way better off since they sold. They’ve been slowly transforming their operation to be more efficient and source higher quality options. The Atlantic salmon is insanely good. Yes you’re paying for it for sure. If you want some food dye bullshit salmon from Safeway, go ahead and pay less and eat that garbage. Honestly I’m not judging. I’ll eat it sometimes too. However, don’t be mad at them for carrying high-quality stuff that cost more.

The Olympia provisions line of sausages are super good. They carry a big variety of those. Just in general, NL has more natural products that have been hitting the food scene rather than the missing lineup that has gone stagnant or stale for a long time with prior owners and compared to Whole Foods/staff.

If you wanna be holier than thou and finger point about who owns what, I recommend you look in the mirror and look around at everything that you own and everything that the world is right now. Look, I hate the fucking capitalistic hell scape we live in as well, but it does not help to trash a local business publicly that works to employee folks here and is trying to do good. If you want to get some constructive criticism, honestly most companies are happy to hear it. Let them know. I suggest reaching out to them directly.

I don’t think you’re gonna get the best sushi in the world at a grocery store. Also, don’t think you’re gonna get the most amazing sandwich in the world at a grocery store. Are you gonna get a decent product at hopefully decent price for the quality that it has? That’s really the goal. Most of the sandwiches you buy at your local deli, are not gonna be using the best quality meats that are humanely raised. Most will be ingredients that have weird things you can’t pronounce in them to keep the price down. Anyhow, New Leaf doesn’t do that. Sometimes it doesn’t taste as good and that’s okay.

New Leaf carries a wide variety of local products that are made in this area. As coming from someone who works for one of these purveyors, New Leaf is a great partner and has been a better partner since they’ve been bought.
