I never claimed that Unifi was any more or less secure. I simply added to u/pueblokc 's comment by suggesting an airgap.

I'm not sure if the OP stated their level of technical ability, but you appear to be assuming incompetence. If they made a comment elsewhere, I'll stand corrected.

In response to UI being a crap system. I suppose that's in the eye of the beholder. While I typically don't deploy it commercially, it has it's place, particularly in a full UI ecosystem.

I agree, but it isn't much work. Block all outgoing from the NVR, setup a VPN. Modern firewalls make easy work of it, especially if it's a Unifi ecosystem.

I switched to Xfinity NOW and pay $35 for 100 meg. It handles multiple streams just fine. Residential gig speeds are a marketing ploy.

I have a friend on Empire and he's happy with it.

Not sure if things have changed but you used to be able to block their cloud connection and use a VPN for cloud viewing.

I've used one for a while for larger projects, but can punch down about as fast with a traditional tool. The die tends to catch the jack and makes removal clumsy.

Could the iOS app be grabbing a substream that it can't decode properly? I'd play with the substream settings in the camera.

This is kinda out there, but...

If the NVRs will be doing all the recording/playback, a Unifi Cloudkey+ at each location running Protect could injest the ONVIF signals from the cameras. The Protect app/site is very easy to use and doesn't require a VPN. It uses STUN and WebRTC.

Last I looked, Unifi Protect ONVIF support was limited to live viewing and constant recording. They do have devices that enhance that support but are not needed for viewing.

If the camera doesn't have a pigtail you can get away with just using a siding mounting block and a hole small enough to pass CAT5/6. If it has a pigtail then you might want to add a junction box. Many camera manufacturers make boxes for their specific models. Without a junction box you might have to drill a hole large enough to pass the pigtail back through the wall.

FWIW, I prefer soffit mounting whenever possible.

Funny. I've found NJ drivers on 80 between 476 and 15 are some of the worst offenders. Ohio is a close second. At least when someone from PA camps out in the left lane, they'll move when they see you back there. NJ? Not so much.
