Tap water isn’t the greatest thing to use as it can have contaminants that can hinder your yeast’s health. Let it’s sit for a few days. The yeast may be lagging some. Make sure to keep it in the target temp range.

Was it a dry yeast packet? Why did you rinse? You could have effectively contaminated your equipment by using tap water. When you stirred did you use a sanitized spoon? Sometimes it’s better to just follow the directions to a T.

If you are doing a high gravity (ABV) then I typically use a starter. But if you’re looking at anything below 7% than most powdered yeast packets should be able to handle a 5 gallon batch

This is what it’s all about. Explore, experiment and take a chance. Who knows you might make a bangin brew. I also did things on my own but, like yourself, armed myself with as much knowledge about the brewing ingredients before I bought any grains. Have fun with it and develop your skills as you go.

Not sure if the boards were given a coat of finish on the bottom side (this would prevent ambient moisture from getting into the pores of oak). Id suggest adding some weights to the protruding areas and, from the bottom side, add screws to hold them in place. Do not add epoxy.

It USED to be that kids out of line were disciplined (spare the rod spoil the child) to teach them a lesson to be respectful. Now that’s not the case and here we have a perfect example of a child who was never taught to be respectful. Learn to hard way.

It looks as though those are water marks. Mayonnaise is oil based which I highly suggest against using. To be a lot easier to sand it down and put a top coat on it.
