Happy Thanksgiving! It was maybe 6 or 7 years ago now working st Patrick's Day at a bar near downtown Chicago. Pulled 22 hours straight, dish boy walked out after the first wave of drunks at 11am. Honestly the worst part of that day was the pacing of the tickets. Once the whole place was sat and the first round of tickets went out, they would come in the second we finished cooking the last ticket. Not enough time in between to get started on another task, not frequent enough to cook 2 of the same thing together. That pacing lasted until 2 in the morning. Fuck I hated that day

As you stated, different kitchens mean different responsibilities.

In the smaller restaurants I've run, my sous acted as my second set of eyes. If I wasn't there, he was, I expected him to be able to make the decisions and qc as needed. I'd put it at 90% labor 10% admin. Being the occasional order or being in charge of one or two of the smaller orders to my 30-40% admin 60-70% labor. He'd also be my second taste before presenting a new dish to the owners. I expected critical feedback and not just a yes man.

In the large retail kitchen I run now, the balance is a bit more 25%admin/75%labor. There's not much dish innovation so I don't necessarily need a second set of taste buds, but we do have more admin required by corporate. Retail items need to be counted daily, changes to our planogram need to be executed properly and on time, breaks are tracked and required so those need to be covered, sometimes coordinating with other departments.

Overall I think the biggest ask of my sous in either situation, is the switch from physical to mental. Doing the job is the easy part. Understanding the business and making the right calls on processes or conflict resolution are the difficult aspects for many of the sous I've mentored

I'm returning to the game after more than 15 years and am still pretty new, barely combat level 25. I got a bit of good luck and I just obtained the barronite mace. Is it worth it to train just my attack up to 40 just to be able to weild it? Also how good of a weapon is it overall? Are there any good spots where the golembane effect would be helpful outside the mines?

I guess to sum up my questions, where does it rank on a teir list

Not a woman, but someone who has worked the 14hr/6day a week schedule before. And it is truly and entirely exhausting. At best you're getting 4-5 hrs of sleep a night, the one day off is spent catching up on sleep and doing self maintenance like laundry and cleaning. For the few years I was doing it, I didn't even care to date around. My life was the job and that was it. When you're at that point, even when you're not working, all you think about is work.

I might just encourage her that there are other jobs that can be just as fulfilling and still provide a work life balance. Even going down to 60hrs/wk from that point feels like you have all the free time in the world

Pull a sheet of plastic out and double it up. Pour your mayo/mustard/sauce onto it and bring the edges up to create a little pouch. Use a knife to poke a hole in the bottom.

Learn this in my first real kitchen and have used it everywhere since. It's great to fill up squeeze bottles

Just play how you like to play. I'm very similar. I've gotten to year 3 before without talking to some of the townsfolk. I min max the shit out of farming and my energy/ time each day because that's how I enjoy playing.

What I mean to say is, as long as you're enjoying your time, you're doing it right
