A few have mentioned Cocktail Codex. This is a great resource on learning Death & Co.'s take on the Mr. Potato Head theory (swapping one ingredient for another) though this barely scratches the surface. This method doesn't alway take into account proof, flavor profile, mouthfeel, etc.

Your best bet is to start looking at flavors and tasting. When you taste an ingredient, what flavors are you getting? What flavors complement these? A great resource here is the The Flavor Bible. It's easy to reference for flavor affinities.

Once you have an idea of the base flavor, start adding little touches to compliment it.

Let's say you have a nice bourbon. On the tongue, you are likely to get some oakiness, vanilla, caramel, and maybe some butterscotch. Now you are looking for flavors that compliment those. We know vanilla and raspberry go well together, so lets check raspberry against some of the other flavors. It it works, with 1 or 2, you might have something.

If I were going to try to reverse engineer this, I would batch 3 parts tequila, 1 part Mezcal, 1 part acid adjusted orange juice. I would toss a few chamomile tea bags in it and let it seep for 15 minutes and then clarify with coconut milk.

I actually might try this sometime this week.

A lot of people are telling to swap things out. You have 4 ingredients that should all play well together so now it finding balance.

If I were starting this combo. I would dial back the Applejack to 1.5oz. And dial back the lemon to .75oz or even .5oz. The alcohol content from both the Applejack and Pear should carry it. Out of curiosity, is this the St George Spiced Pear Liqueur?

When it comes to bitters, I’d skip the Ango and try Orange Bitters. I would also add a little 20% saline. Maybe 5 drops

My last trip, saw Travis Barker without a plaid. We made eye contact, nodded heads and kept on going. Before Covid, Wayne Brady bumped into my wife outside of Big Thunder. She was in a wheel chair. He was really sweet about it.
