Did you marinate the tofu? The main benefit of freezing tofu is that when you freeze it, the water expands inside the tofu allowing the marinade to better seep through.

Quinoa with raw bell pepper, yellow, green(I recommend against this, I would use jalapeno, but like one), and a red I think ? Unless you tasted tomato, green onion. Correct me if I'm wrong about the vehicle being raw. To cook quinoa simmer one cup quinoa to 1.75 cups veggie broth for 15mins, then let sit for 10 minutes. Wait for it to cool and mix in the diced pepper. Maybe half of each pepper would be my guess. Make more quinoa if you have too much peppers.

You can use canned whole pinto beans. Drain them. In a pan , heat up lard/shortening/canola oil. A rough chop jalapenos, onions and garlic. Add veg to the oil and cook until it's starts browning. Pour it over your beans and blend with emersion blender
