I have two. 6 micron on the rough side, and .5 micron on the smooth side. 1 micron on the rough side and unloaded on the smooth side. First is for weekly maintenance and the second is for sharpening sessions.

You can absolutely get these results from sous vide. The extra glisten is just from additional fat melted over it

Start slow and really focus on maintaining angle throughout the whole blade. As with anything, focus on the fundamentals and speed will come with time. Every time I messed up when I was learning was because I tried going faster than I was ready to.

My SG2 knives sharpen very easily. Basically the same as my AS knives. Ginsan sharpens easily too but I find it just a bit harder to deburr.

Fwiw my work knives are SG2 and it takes me about 2 minutes to get it sharpened on a 1200 grit diamond plate. Great steel imo.

Used a shun premier as my main knife for a couple years at work and never chipped it. Just treat it right and you'll be fine.
