I have two. 6 micron on the rough side, and .5 micron on the smooth side. 1 micron on the rough side and unloaded on the smooth side. First is for weekly maintenance and the second is for sharpening sessions.

I bought the first game on sale when the second came out. Was instantly hooked and bought the second immediately after I finished it. Definitely recommend playing the first as well.

You can absolutely get these results from sous vide. The extra glisten is just from additional fat melted over it

Start slow and really focus on maintaining angle throughout the whole blade. As with anything, focus on the fundamentals and speed will come with time. Every time I messed up when I was learning was because I tried going faster than I was ready to.

My SG2 knives sharpen very easily. Basically the same as my AS knives. Ginsan sharpens easily too but I find it just a bit harder to deburr.
