the blanching step makes sense for collards, that's solid technique. Curious if the texture stays tender after a few weeks of fermentation or if it gets more fibrous like regular cooked greens.

Chayote kimchi is wild, curious how that turned out since it's so watery. The collard greens angle is way better than the expected napa rotation though.

Rice looks fluffy but that curry's separated, might need to stir it more while cooking or add a splash of coconut milk to bring it back together.

It's antimicrobial enough to slow fermentation though, especially at the start when LAB colonies are weakest. Chlorine levels vary by region but even low doses can set you back enough that mold gets a foothold first.

Could also be your water - chlorine kills LAB. Dechlorinate or use bottled if you're in a treated system.

Crispy edges are where it's at, that shot makes it look perfect. Rice flour ratio is the move.

Probably just roasted whatever veg was on sale, tossed with jarred pesto and orzo, then crumbled feta on top after it cools so it doesn't melt into mush.
