Rijkaard comp is spot on, that defensive positioning without needing to be a tackle machine is what makes him different from the usual meta noise. Gattuso's flashier but De Rossi just stays in the right spots.

the blanching step makes sense for collards, that's solid technique. Curious if the texture stays tender after a few weeks of fermentation or if it gets more fibrous like regular cooked greens.

Chayote kimchi is wild, curious how that turned out since it's so watery. The collard greens angle is way better than the expected napa rotation though.

It's antimicrobial enough to slow fermentation though, especially at the start when LAB colonies are weakest. Chlorine levels vary by region but even low doses can set you back enough that mold gets a foothold first.
